I've never owned a pressure cooker before. They always scared me and I didn't understand what all the hype was about.
But I brought one of these home one day and now I'm obsessed with it. I want to cook in it at least 2-3 times a week and I'm always shopping for ingredients with the thought of cooking in it in mind. My instruction manual came with plenty of recipes but so far the recipes I've enjoyed the most are ones that I found in slow cookers that I just adapt to be used in the pressure cooker. Every meal has turned out beautifully. Tender, flavorful and quick!!! I'm told that the old fashioned stove-top ones can be really noisy and risky. This machine is super quiet until you release the pressure. I have a lot of fun cooking with this machine. I LOVE MINE!!!

I had an old pressure cooker and was afraid of it sometimes but this one only blows out the steam after it's done and if you wait another 15 minutes all the steam is gone much saferit seams.
My friends love my ribs!

This is the first pressure cooker I've owned and I love it. Soups and stews turn out great, and fast. But the most popular things is my ribs. I fit 4 racks of baby back ribs in this thing, cooked them for 40 minutes and then finished them on the grill with BBQ sauce. They were fantastic!

There is definitely a learning curve to see what works and what doesn't. The manual has some recipes, but is a little skimpy. It's easy to use, and it has a non-stick insert that cleans really easy. I like that you can brown right in the pot before you start cooking too.

Overall, it is one of my favorite purchases. Well worth the money.
Tough Under Pressure

I received my Maxi-Matic 8 Qt Digital Pressure Cooker and immediately put it to work. This is the third pressure cooker I've purchased. (I have a stove top 4 qt model and a 6 qt 3-in-1 Fagor) and this 8 qt model is just as easy to use and as fast as the Fagor! The automatic timer functions worked perfectly, it was quiet to operate and easy to clean up. It's a bit bulky, so unless you have a lot of counter space or a big pantry/closet, storage may be an issue. The instruction manual has some recipes and great charts of cooking times, so it takes the guesswork out of cooking, the manual is available online as a pdf and it was easy to find additional recipes on the web. My first batch of asian style short ribs turned out perfectly in 8 minutes and were eaten in less then that. Overall I give it 4 stars! (minus one for it's bulkiness)

The manual for this PC (available at [...]) is the most detailed and informative of any PC's. If you look through it before purchasing, you'll know all of the details it's hard to find for other PCs. So many of them hide the psi level, because they don't want you to know how weak it is! This one is 12psi on HI [a stovetop PC goes to 15psi] as is Puck's 7 QT; but Cuisnart's EPC1200 and my old Cook's Essentials CEPC600S are only 10psi, so things take longer to build to pressure and to .

Beginning in the 1930s, two generations of busy cooks employed pressure cookers to prepare family meals. The next generation, freighted with memories of valves dancing and hissing on stovetops, then snubbed pressure cookers. News flash--pressure cookers have come back, those old valves replaced by modern versions that ensure safety while delivering the speed, ease, and nutritional benefits of pressure cooking.

This heavyweight, stainless-steel beauty is a fine example of contemporary engineering and style. Its mirror finish gleams, and its black handles, including a loop handle for two-handed lifting, stay cool. Pressure cooking traps steam to heat foods at temperatures higher than boiling. This cooker has an aluminum disk sandwiched by stainless steel in its base to speed the process even more through fast heat conductivity. It's safe on electric, gas, ceramic, and induction stovetops. Little water is required, so nutrients, flavor, and color are not boiled away. Vegetables emerge vibrantly colored from the steamer basket insert. Stews, soups, beans--even meat loaf, pork chops, and desserts like bread pudding--come out tasty and nutritious. (Recipes included.) Meats can be browned in the pot before the lid is locked on, and the pot can be used without the lid. The operating valve offers high and low pressure settings for cooking foods at ideal speeds.

Safety measures abound. The lid twists onto the pot, with a rubber gasket ensuring a tight seal. A lock secures lid to pot. A vent releases steam if pressure builds too high, as does a valve that also locks the lid when any pressure whatsoever is inside the cooker. Another device indicates pressure and gently releases steam during cooking.

Cleanup is a bit complicated. Hand wash pot, gasket, and lid with a mild detergent. Lightly oil the gasket. Remove and clean the operative valve. This minor cleaning inconvenience, however, should not overshadow the major convenience of pressure cooking. --Fred Brack
